I want to remove the onboard potty and cap it off. Does anyone know what would be the best way to do it and still keep my fresh water wash out?

You should be able to find where the water line T's off the main line , at that point remove the T and replace it with a coupler, Then you will still have water to everything but the head. Everything else with with the toilet has it's own systems
