Is it okay to water ski from a 262 Fisherman?
If so, does anyone know if there's a specific Pylon for this model?

Sure, why not. Just figure out a way to keep the line out of the prop

Yes. The rod holders make it perfectly safe and fun to ski on 262 fisherman. Try it out, and I'm telling you it'll be total pleasure!
